Yes another post about quinoa, but you guys it is really versatile, healthy, and just darn yummy!!! You can do so much with it! Today I am bringing you Lime Cilantro Quinoa, served with grilled steak and salsa!
Here’s what you need:
1 bushel of cilantro (de-stemmed and chopped)
Salt & Pepper
Salt and pepper your steaks and set them off to the side.
Rinse your quinoa in cold water and shake dry. With about a teaspoon of coconut oil in a pan toast your quinoa. Add in chicken broth (you will want to follow the package for exact measurements, but it is usually a ratio of 1 cup quinoa to 2 cups liquid).
Bring to a rapid boil then reduce heat and cover, letting simmer for about 15 minutes.
Once the quinoa is almost done you will want to add your chopped cilantro and fresh squeezed lime juice to it. Give everything a good stir and cover again with the heat off. This gives the quinoa some time to incorporate the flavors nicely.
Salt and pepper your steaks and throw them on the grill. We like ours rare-medium rare, but we were distracted with our new dogs we just got… nothing like coming home from work and finding two half English Mastiff and half St Bernard dogs running about the house! YIKES!! So our steaks came out more “done” than we normally like.
Slice up your steak and serve over quinoa and top with your choice of salsa or hot sauce! My husband added chopped jalapeños, to his quinoa and threw some extra on top of his salsa, so if you like some extra heat that is a good way to spice it up!
Another super tasty and super healthy dish… I guess this diet thing isn’t so bad after all! :)
