For as long as I can remember, every time I visit my Aunt Judy she makes her Chicken Divan. It is the most amazing comfort food ever!
Here’s her recipe:
2 pkg frozen broccoli (I just use a whole mess of fresh broccoli, cut it up in bite size pieces and microwave it for a few minutes. I like lots of it. Put on bottom of 9 x 11
3 c. cooked diced chicken. Put on top of broccoli
Mix the following together:
1 can cream of chicken
1 can cream of mush
1 Tbl. curry powder
1 1/2 Tbl. lemon juice
1 c. mayonnaise
Pour mixture on top of broccoli and chicken. Top with grated cheese then cracker crumbs (I like Ritz.)
Cook 350 for 25-30 minutes. Put over cooked rice. Unbutton pants before eating – hehe.
This makes a ton! She has four boys and an open door policy, so she’s used to feeding a crowd! I mix everything in a big bowl and put at least half in a ziploc (If I’m not planning on leftovers, I do two ziplocs) and freeze. After you defrost it, you can put it in a pan and then top with cheese and crumbs and bake like normal. I also like to stick it under the broiler for a couple minutes after it cooks to give the crumbs a nice golden glow.
I serve this over rice with a side of green peas to counterbalance all the carbs and sauce!
